Ingredients:
- 4 boneless, skinless chicken breasts
- Salt and black pepper to taste
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 teaspoon paprika
- 1 cup diced mango
- 1/2 cup diced red bell pepper
- 1/4 cup finely chopped red onion
- 1 jalapeño, seeds removed and finely chopped
- Juice of 1 lime
- Fresh cilantro, chopped, for garnish
Instructions:
- Season the chicken breasts with salt, black pepper, cumin, chili powder, and paprika.
- Heat olive oil in a skillet over medium-high heat.
- Cook the chicken breasts for about 6-7 minutes on each side or until they reach an internal temperature of 165°F (74°C).
- While the chicken is cooking, prepare the mango salsa by combining diced mango, diced red bell pepper, chopped red onion, chopped jalapeño, and lime juice in a bowl.
- Once the chicken is cooked, top each breast with a generous scoop of mango salsa.
- Garnish with fresh cilantro before serving.
