Ingredients:
- 8 oz (225g) pasta (spaghetti or your choice)
- 1 cup fresh basil leaves
- 1/3 cup pine nuts
- 1/3 cup grated Parmesan cheese
- 2 cloves garlic
- 1/2 cup extra-virgin olive oil
- Salt and pepper to taste
- 1 cup cherry tomatoes, halved
- 1 cup fresh mozzarella balls, halved
- Fresh basil leaves for garnish
Instructions:
- Cook the pasta according to the package instructions. Drain and set aside.
- In a food processor, combine fresh basil, pine nuts, Parmesan cheese, and garlic. Pulse until finely chopped.
- With the food processor running, slowly pour in the olive oil until the mixture forms a smooth paste. Add salt and pepper to taste.
- Toss the cooked pasta with the pesto sauce until well coated.
- Gently fold in the cherry tomatoes and mozzarella balls.
- Garnish with fresh basil leaves.
