Ingredients:

  • 8 oz (225g) pasta (spaghetti or your choice)
  • 1 cup fresh basil leaves
  • 1/3 cup pine nuts
  • 1/3 cup grated Parmesan cheese
  • 2 cloves garlic
  • 1/2 cup extra-virgin olive oil
  • Salt and pepper to taste
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh mozzarella balls, halved
  • Fresh basil leaves for garnish

Instructions:

  1. Cook the pasta according to the package instructions. Drain and set aside.
  2. In a food processor, combine fresh basil, pine nuts, Parmesan cheese, and garlic. Pulse until finely chopped.
  3. With the food processor running, slowly pour in the olive oil until the mixture forms a smooth paste. Add salt and pepper to taste.
  4. Toss the cooked pasta with the pesto sauce until well coated.
  5. Gently fold in the cherry tomatoes and mozzarella balls.
  6. Garnish with fresh basil leaves.
