Ingredients:

  • 4 bone-in, skin-on chicken thighs
  • Salt and black pepper to taste
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Zest and juice of 1 lemon
  • 1/2 cup chicken broth
  • 2 tablespoons unsalted butter
  • Fresh parsley for garnish

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. Season chicken thighs with salt and pepper.
  3. In an oven-safe skillet, heat olive oil over medium-high heat. Add chicken thighs, skin side down, and sear until golden brown, about 4-5 minutes.
  4. Flip the chicken thighs. Add minced garlic, dried thyme, and dried rosemary to the skillet. Cook for 1-2 minutes until aromatic.
  5. Add lemon zest, lemon juice, and chicken broth to the skillet.
  6. Transfer the skillet to the preheated oven and bake for about 20-25 minutes or until the chicken reaches an internal temperature of 165°F (74°C).
  7. During the last few minutes of cooking, add butter to the skillet and baste the chicken with the pan juices.
  8. Garnish with fresh parsley before serving.
