Ingredients:

  • 8 oz (225g) spaghetti
  • 4 cloves garlic, thinly sliced
  • 1/2 teaspoon red pepper flakes (adjust to taste)
  • 1/3 cup (80ml) extra-virgin olive oil
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Fresh parsley, chopped, for garnish
  • Grated Parmesan cheese, for serving

Instructions:

  1. Cook the spaghetti in a large pot of salted boiling water according to the package instructions until al dente. Reserve about 1/2 cup of pasta cooking water before draining.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the sliced garlic and red pepper flakes. Sauté for 1-2 minutes or until the garlic is just beginning to turn golden.
  3. Add the cooked and drained spaghetti to the skillet. Toss well to coat the pasta in the garlic-infused olive oil. If the pasta seems dry, add a bit of the reserved pasta cooking water.
  4. Season with salt and black pepper to taste. Toss again to combine.
  5. Garnish with chopped fresh parsley and serve immediately. Optionally, top with grated Parmesan cheese.
