Ingredients:

  • 4 boneless, skinless chicken breasts
  • Salt and black pepper to taste
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • 1 cup diced mango
  • 1/2 cup diced red bell pepper
  • 1/4 cup finely chopped red onion
  • 1 jalapeño, seeds removed and finely chopped
  • Juice of 1 lime
  • Fresh cilantro, chopped, for garnish

Instructions:

  1. Season the chicken breasts with salt, black pepper, cumin, chili powder, and paprika.
  2. Heat olive oil in a skillet over medium-high heat.
  3. Cook the chicken breasts for about 6-7 minutes on each side or until they reach an internal temperature of 165°F (74°C).
  4. While the chicken is cooking, prepare the mango salsa by combining diced mango, diced red bell pepper, chopped red onion, chopped jalapeño, and lime juice in a bowl.
  5. Once the chicken is cooked, top each breast with a generous scoop of mango salsa.
  6. Garnish with fresh cilantro before serving.
